Here's great news from the American Institute for Cancer Research: A single tomato contains hundreds, possibly thousands of phytochemicals that perform different functions in our bodies to prevent cancer. Tomatoes are especially rich in the phytochemicals called lycopene, which has been linked to reduced prostrate cancers and is strongly believed to act as a breast cancer preventative as well. I love tomatoes sliced, with basil, Crazy Mixed Up Salt and Pepper, Feta cheese, and an oil and vinegar dressing. Yum! We go through dozens of tomatoes a week, in omelets, salads, sauces, sandwiches and soups - like you Dotsie, any way possible. My favourite is a grilled tomato, bacon and cheese sandwich - I especially like changing the cheese - jarlsburg, gouda, cheddar and feta are my favourites so far. Mmmmm.
