Geese. I just googled the shelf life of eggs and they say
6 to 7 months. Who knew? I forgot to take my eggs out of the
frig and with us on vacation. Was gonna throw 'em out; but
gosh. Not now. I had no idea they last that long. Did you?

I had a boss years ago that had been in the navy. He told me they stored eggs for up to 2 years!!

Keep in mind that most eggs you buy at the grocery store are not fresh; they are at least 2 weeks old once they hit the market. (So I've been told). Someone in my food co-op just told me that if you boil eggs and the shell is impossible to get off, that means they were really fresh. If the shell comes off easily after boiling, that means they had been sitting for awhile.

I have eggs in my refrigerator for a couple months sometimes and they are always fine. I use a lot of Egg Beaters but still buy and use regular eggs. I just don't use them up as fast. No matter how old an egg is if you put it in tempid water then allow it to come to a boil and boil awhile, then run the eggs under cold water the shell should come off easily.

When we had chickens, we brought them in as soon as we retrieved them from the nesting boxes. Then, they lasted for a LONG time. Friends purchased them as well and they really did taste fresh!

(gosh, I miss having chickens now!)

I had no idea eggs lasted so long. I generally use them up in
a couple of weeks and buy new ones. But I realized I forgot
to take the eggs I had put in our refrigerator, along on the
trip. So I googled to see how long they lasted. When I read
6 to 7 months, I couldn't believe my eyes.

When I was a kid on the farm, my mother had chickens and sold eggs. But she tested 'em and sold 'em to customers quickly.
Therefore I didn't think they lasted that long. Gosh, ya learn
something new everyday! LOL...

This is a bit off subject but is about eggs... My girlfriend called me before St. Patricks Day to chat and said she was going to a party where everyone brings a dish. She was taking 'deviled eggs.' She said, she was adding green food coloring to the mashed up yolk mixture before putting it into the whites so she would have a lovely platter of 'green eggs.'

Now all you artists here will understand this I'm sure but I said, you need to add blue coloring, not green, because the green and yellow makes a pucky looking brown. Blue and yellow will make a bright kelly green color.

Well she cooked up four dozen eggs, made her yolk mixture adding GREEN food dye, and yep, it all turned a dismal brown... She ended up throwing most of it out and taking bags of potato chips and cookies...

She was heard to say later she should have listened to me but I so act like I know everything!!!

I may not know everything, far from it, but what I know, I know well, usually having learned from a mistake I or someone I know has already made.

BROWN deviled eggs anyone, blah!!!

She should have listened to you! That's a lot of eggs to throw
away. I love deviled eggs, now and again. It's like anything else, too many, and you get sick of 'em. But once in a while, they're great!

I know but she said the color was so awful they looked rotten so rather than be embarrassed she tossed out almost all of them but did save some to eat herself. They looked terrible but still tasted like they were suppose to.
