I roast sweet potatoes just as I would roast potatoes..(usually with parsnips)

drizzle with olive oil..season.

Pecans could be added at some stage of the process..

I buy foil platters and lay all the root vegetables available on the platter.I spray olive oil and when cooking turn with tongs..the seasoning is herbane...a mix I use.
the variety of vegetables vary...as many colours as possible..some small tomatoes and garlic cloves added late in the process..I use different varieties of onion..
chop some finely along with the tomatoes and garlic..suppose its a hot salad!
I then transfer the veg to my good dishes..

Roasted sweet potatoes are the best!

Now that I've had sweet potatoes this way, I wonder why I ever thought they needed marshmallows to make them taste good? Must have been that was the way they were served to me as a child...

I love sweet potatoes, cooked any way. We often cook up batches of sweet potatoe fries (we bake them in the oven, but will probably try them in the new deep fryer that hubby bought me for Christmas).

We also roast them similar to Mountain Ash, with other veggies (onions, parsnips and carrots are our favourites) in the oven.

We've also just boiled and mashed them, sometimes we mash them together with carrots and/or regular potatoes. When we boil them, we'll sometimes throw a clove or two of garlic into the water to add flavour, then mash it up with the potatoes too.

We'll be having sweet potatoes for our Christmas Eve supper (chicken and fixings). Haven't decided how, probably mashed since the oven will be busy with the chicken and dressing.

One thing we've done in the past that was a big hit was cooking chicken on top of a layer of potatoes...we tried it once because we couldn't find a rack, and everyone loved it...the chicken was moist and the potatoes were the yummiest ever. We haven't tried it with sweet potatoes yet, but that's a thought...

Eagle Heart, Those ALL sound like YUMMY ways to make sweet potatoes. Thanks for adding to my sweet potato knowledge, especially as I just bought some today.

I always have sweet potatoes in my home, and many times I simply pop one in the microwave and eat it all by itself. I do add a sprinkle of brown sugar and of course butter some of the time. It is a great and very healthy snack.
