Easy Cinnamon Brunch Cake

2 cups all purpose flour
¾ cup sugar
1¼ cups milk
2 teaspoons vanilla
3 teaspoons baking powder
1 large egg
Pinch of salt

TOPPING
½ cup brown sugar
1 teaspoon cinnamon
¼ cup melted butter, unsalted
½ cup chopped pecans or walnuts

Heat oven to 350 degrees. Grease a 9x9 inch baking pan. Mix the brown sugar and cinnamon in a small bowl; set aside. In a mixing bowl, using a large wooden spoon, mix the flour, sugar, baking powder, salt, milk, vanilla, and egg just until combined. Do not over mix. Pour into prepared baking pan. Sprinkle the brown sugar-cinnamon mixture over the top of the batter and then sprinkle the chopped nuts over that. Drizzle the melted butter over top. Bake for 30-35 minutes or until tooth pick inserted comes out clean. Serve warm.

This looks yummy. Are you making it for Easter? I'm printing it and may give it a try. I'm having an Easter brunch after church. Hadn't planned on making anything sweet, but may do so if I have time. I think it would go well. Thanks. I have all the ingredients. I love recipes like that.

Dotsie, it is yummy, and so easy to make!! It's one of the things I am making Easter morning to have after sunrise service.

Cookie, that recipe DOES sound yummy!

I just found a recipe for a "Mother's Day Brunch Cake" in the Chicago Tribune. It sounds really good, though I doubt I'll make it, since I don't have coconut milk...

If that name is too vague for you, let me say that I'd probably rename it "Coconut and chocolate Marble Pound Cake."
