Anyone have a tried and true white chicken chili recipe? This is something my son orders at this fun restaurant in the city. I'd love to make it. I know it's not hard, but I want to use a recipe that someone else loves. Anyone?

Dotsie, I find tons of recipes online, with ratings and comments. Me, I never really completely use a recipe - I look at several and then use the ingredients that appeal to me.

So, no, I do not know of a recipe. Long winded way of saying that, I guess.

I am not familiar with seeing a recipe like that so far. Maybe your son can dissect the dish by eating it....slowly. smile

Sounds like sauteeding or pan-frying chicken breast could be part of the recipe. I've made chili from scratch, which included soaking kidney beans overnight. If I made chili chicken, I would be using Malaysian chili paste (sambal olek) to fry up with the onions and garlic, before adding other stuff. I take after my mother, who invented after examining dish.

Ended up with some wierd dishes. Oh well.

By the way, my imagined white chicken chili, sounds delicious to me. Truly. It wouldn't be that unusual..sounds like replacing the sausage or ground beef. Less fattier too. Recipes online by typing that whole phrase name in Google, look interesting. I would tend to marinate the chicken breast in advance to give it more flavour.

White chicken chili is delicious but even regular chili is better with ground turkey. Turkey is a sweeter meat than ground beef, probably not as many chemicals in the turkey.

I made my version of the Southern Living recipe for dinner last night. It was a hit. The recipe is down in the kitched so I'll get it and post it soon.

chatty, I'll substitute ground turkey for ground beef at times and you really can't tell. It's just healthier.

Here's my version of the White Bean Chili, Southern Living recipe:

1/2 onion, chopped
1/4 T olive oil
1 garlic clove, minced
package of already cooked Perdue chicken breast strips
1 1/2 cup water
1/2 t salt
3/4 t ground cumin
1 t chili powder
1/2 t black pepper
1 t dried oregano
1 can cannellini beans (1/2 can mashed, and the other half used as beans
1 cup chicken broth
11 ounces shoepeg can
4 ounces chopped chiles
Tabasco sauce

Saute' onion and garlic in oil.
Add chicken, and cook until chicken is warm.
Stir in water and next five ingredients; simmer for about 10 minutes.
Smash half can of beans and add with broth. Continue heating.
Add rest of beans whole, corn and chiles.
Bring to boil and then let simmer until right consistency.
Add Tabasco to taste.

YUMMY and DELICIOUS!
