CUCUMBER & PEA SALAD

1/2 cucumber peeled, sliced thin and quartered
2 green onions chopped fine
1 small red tomato, chopped
1 cup frozen sweet peas, thawed
1 tablespoon olive oil
1/2 teaspoon oregano
1/4 teaspoon salt, or salt substitute to taste
2 tablespoon whits vinegar (with tarragon: nice but optional)

MIX all the ingredients together and serve on a bed of lettuce.

Lots of cucumbers this time of year. Sounds good, but I could leave out the peas. Anyone make that cucumber and onion salad? My SIL makes it and it's delish. She slices the cucumbers nice and tihn and it make all the difference in the world. YUM! Had it not too long ago at Dad's.

That is very good and quick recipe, how about adding carrots in the salad? will it tastes good?
