Chocolate Peanut Butter Balls

INGREDIENTS:

25 chocolate wafer cookies, finely crushed.
1 cup + 2 tbsp. confectioners sugar
1/3 cup honey
1/4 cup peanut butter.

DIRECTIONS:

MIX cookie crumbs and 1 cup confectioner's sugar in a large bowl.

WHISK together in a medium bowl the honey and peanut butter unil well combined. Add this to the cookie crumb mixture and stir well (the mixture may be crumbly at this point.)

SHAPE the mixture with your hands into 1" balls (mixture should hold together as you shape it.)

SET the balls aside at room temperature until ready to serve, or store in airtight container at room temperature for 2 to 3 days.
Just before serving roll the balls in remaining 2 tablespoons of confectioners sugar.

These can also be refrigerated and served cold.

I make these and then store them in the fridge until really cold and my guests go wild over them. Good after a fish dinner.
