These are two of my very favorite things to fix for me alone or when companies coming...

CHICKEN POCKETS


Ingredients:

Four skinless, boneless chicken breasts (or just one)
1/4 cup of water
Box of Stove Top Stuffing

Directions...

Slice chicken breast to make a nice pocket...
Mix 1/2 stuffing with warm water to soften(less when making only one for yourself)
Fill chicken pocket with softened stuffing.
Roll chicken in remaining 'dry' stuffing mix.
Spray aluminum foil with Pam, then place chicken on the foil, wrap firmly and place in oven for 1/2 hour @ 300*.
The outside will be crunchy and the inside, so tender!

STEAK ROLL UPS

Ingredients:

Thinly sliced round steaks (or just one)
Fresh Asparagus stalks, trimmed.
Butter

Directions:

Place each steak on a piece of aluminum foil
Place three stalks of asparagus at the end of each steak, then roll the asparagus up inside. Season well and place a generous pat of butter on asparagus, wrap tightly in the foil and pop into the oven for about 30 minutes@ 300*.

I serve both with brown rice and icy cold, fresh sliced tomatoes over leafy greens and cucumbers...

Chatty, these fun, quick recipes sound absolutely great. I'm always looking for "quick dinner fixes" these days with so little time. Thanks for sharing....would love to hear more!

The steak roll ups sound good. I've ever seen a ricpe like that before.

And I love icy cold sliced tomatoes no matter how they're served.

My son makes sliced tomatoes with a slice of mozz cheese and a fresh basil leaf, and an oil, vinegar and spice dressing. YUM!

Love the tomato, fresh mozarella cheese, freah basil and balsamic vinegar too...

Make sure the steak is thin, if not pound it...and yes its delicious!
