Pumpkin Baked Beans

1-1/2 cups of dried navy or soldier beans.
Water
1/2 cup diced onion
1/4 cup dark molasses
1 tsp. salt
2 cups diced pumpkin
1 tsp. orange rind, (grated)
1/2 cup orange juice
1 tsp. brown sugar

Cover the beans with water. Bring to a boil and simmer gently for 30 minutes to tenderize.
Combine the remaining ingredients,(except the brown sugar) with the beans in a greased baking dish. Add water to cover, and sprinkle brown sugar over the top. Bake uncovered at 350*F for 4 hours, adding water if beans become dry.

Pumpkin is check full of potassium and vitamin C and is low in calories and high in flavor...

Chatty, this looks delicious. We love pumpkin recipes. In fact, my brother's looking forward to me making him a pumpkin custard this week (the recipe is out of his new diabetic cookbook). So we'll see how that goes.

Hubby and I like baked beans - this will be an interesting twist to try. Do you think it would work in the slow cooker instead of the oven?

This sound great. Can you buy pumpkin already diced, or is this fresh pumpkin you dice yourself? What an interesting recipe. Leave it to chatty to post this one.

Eagle, oh sure the slow cooker would work just fine. In fact the beans would probably dry out less.....

Dotsie, you can get pumpkin already diced but I prefer to dice my own...

Now ladies, I promise that I am going to give you three recipes tomorrow, one is for easy Pumpkin Pie, one is for Pumpkin-Ginger-Rice-Pudding, and one for a Pumpkin Cake...its near 2:00 a.m. now and I am too sleepy to concentrate...

Pumpkin-Ginger-Rice Pudding

TIP: Arborio rice makes a very creamy rice pudding.

1/2 cup sugar
1 vanilla bean, split lenghtwise, or 1 tsp. vanilla extract.
1 tablespoon grated fresh ginger
1 1/4 teaspoon pumpkin pie spice
4 cups fat free milk
1 cup Arborio rice
1/2 can (80z.) pure pumpkin puree

In a large saucepan, combine sugar, vanilla bean (if using)ginger, pumpkin pie spice, and 1 cup of milk. (if using vanilla extract add along with pumpkin puree at the end.
Heat to boiling over medium heat. Reduce heat to low and simmer 5 minutes. Remove and discard vanilla bean,(if using.) Stir in your rice.

Add remaining 3 cups milk, 1 cup at a time, and cook, stirring frequently, 30 minutes, or until rice is tender and most of the milk is absorbed but still creamy. Stir in pumpkin puree and vanilla extract (if using.) Cook until pudding is thick and heated through....
Serve warm....

You can also add raisins, dates or nuts. I top with whipped cream.

Pumpkin Cake

1 can (29 oz.) pumpkin puree
1 1/2 cups fat free milk
3/4 cups fat free dry milk
6 egg whites
3/4 cups sugar
1 1/2 teaspoon ground cinnamon
1 1/ teaspoon ground allspice
1 package (9 oz) yellow cake mix
1/3 cup packed brown sugar
1/4 cup butter
3/4 cup chopped walnuts (optional, but sooo good!)

Preheat oven to 350*F, Coat a 13"x9" baking dish with nonstick spray...

In a large bowl, using an electric mixer, beat pumpkin, milk, and dry milk until smooth. Beat in egg whites, sugar, cinnamon, and allspice. Pour into the baking dish...

In a medium bowl, combine cake mix and brown sugar. Using a fork or pastry blender, cut in butter until crumbly. Sprinkle evenly over pumpkin mixture. Sprinkle with walnuts, if using...

Cover with foil and bake 45 minutes. Remove foil and bake 15 to 20 minutes more, or until golden brown and wooden pick inserted comes out clean...
Cool completely in the pan before cutting...

For work, cut cake into seprate pieces, wrap and freeze. Take as many as you want for that take-along treat!
