We are doing a brunch/lunch.

I have some great quiche recipes if you are interested.

I'll also make asparagus with a scrumptious dressing, fresh fruit salad, and soem green salad creation that I haven't decided on yet.

We'll also have ham. I'll make some deviled eggs and probably soem sort of pasta salad.

TVC, what meal are you doing?

The only thing I'm sure of is the manicotti. I've got some saved (was fresh) in the freezer from NY. I can't get the good stuff here and not really wanting to start from scratch this time.
Probably ham, but it depends on who is coming. Some people don't like it and I'm not sure if they will be eating with us yet.
Asparagus is a definite. I'll be sauteeing it with garlic, The recipe I use should be posted on my site in a day or two.
If I don't do the ham I may try a Prime Rib, but I've never done one before. I've heard it's good done on the rotisserie so I might give that a try.

Any suggestions for cooking Prime rib anyone?

TVC15, I have done a half dozen prime ribs of beef on my rotisserie like yours and they came out so good, to die for. Before I started the meat cooking I took a teaspoon of crisco (lard) and mixed in a teaspoon of italian seasoning and two crushed/mashed garlic bulbs. Mix the three things together then with a sharp knife make a knife prick about 1 inch deep in the beef and fill it with some of the mixture. Then cook as usual. The flavors from the mixture will permeate the meat with the flavor and its fabulous. This is good for any roast, veal, pork, beef even roast chicken....

I'm going to try that. Do you know how long I need to cook it? Is the time in the book? I've mostly done poultry in mine. (Made the chicken again last night)

Yes, it should be the same as a regular beef or pork roast and is in the book....
