Here's another recipe for pattypan squash, which I made up the other day. Please keep in mind I never measure anything. Also, the times listed -- and I never time anything either -- are about how long until the next item is added. All items stay in the pan once they're stirred in.

Start w. a large wok or frypan, a little oil on the bottom.

Add 4 pattypan squash (can substitute 2 small zucchini or yellow crookneck) sliced thinly and lightly salted. 5-10 minutes or till lightly brown.

Add 1 large onion (I used white) coarsely chopped 5 minutes.

Add 1/4 cup chopped walnuts and 1/2 cup sliced crimini (can sub one large portabella) mushrooms. 5 minutes.

Add two medium tomatoes, chopped. 5 minutes.

Add (contents of) one can Taco Bell no-fat refried beans w. chilies. If you don't use the chili type, you need to add a bunch of spices at the beginning.

As soon as the beans are warm, it's ready! Makes 3 bowls.

Meredith, this sounds delicious. I've made zucchini, squash, onions, and tomatoes before with oil, garlic, and I talian spices, but the addition of mushrooms, nuts, and beans is mouth watering. Gotta try it. Thanks.

Does this work for current husbands?? Also, do you think it might lure the opossums out of my avocado tree? Nice crop of fruit right now, but 80% inedible due to rat-faced arboreal critters getting to them first.
