JALAPENO POPPER - MINI PIZZAS

Ingredients:

* 1 (1-ounce) package refrigerated thin crust pizza dough
* 4 slices bacon
* 1 small bell red pepper, finely diced
* 2 jalapeno peppers, chopped
* 4 ounces cream cheese, softened
* 1 cup shredded cheddar cheese, divided
* 1/2 cup crushed corn chips

Directions:

Preheat oven to 425*F.
Place unrolled dough onto cutting board.
Using a sawing motion slice dough into 24 discs.
Place discs onto bottom of oblong pan, press to flatten.
Bake 11 to 13 minutes or until golden brown.

Meanwhile slice bacon into 1/4 inch pieces, cook in saute pan on medium high heat 8-10 minutes. Remove from pan and drain on paper towels.
Drain bacon pan but leave 1 teaspoon drippings in the pan.
Add bell pepper and jalapenos and cook over medium heat 2 to 3 minutes until tender.
Combine cream cheese, half of the cheddar cheese , bacon and peppers in a bowl; mix well.
Divide cream cheese mixture evenly over individual pizza crusts.
Sprinkle with remaining cheese and crushed chips.
Bake 4 to 6 minutes or until cheese is melted.

Serve Immediately!

chatty, do you ever use the microwave bacon?

I'll use it for recipes only. It's perfect for something like this, but not great to eat alone.

These ingredients are making my mouth water, but I bet it's got a lot of calories.

I do use mi cro wave bacon once in awhile, for these I bough the alreaqdy cooked bacon in bits, its great and so easy. Now the peppers aren't anything and neither is the dough. The cream cheese can be low fat if you want to, but in all one pizza popper is only around 110 calories. NOT BAD, considering the flavor and ease in making them.
You can also use ground turkey, or pieces chicken shredded and chopped. The bacon is the best tasting though.
