MYSTERY NUT BREAD
Quick Bread bakes in 35-45 minutes at 375.

1 cup flour
1 cup finely ground almonds
1 1/2 cups sugar
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup canola oil
4 eggs
1 med.zucchini, OR can pumpkin OR 3 bananas
Mash zucchini and bananas and pumpkin.
1 teaspoon vanilla extract
Mix all ingredients together, place in floured pan and bake.
The Mystery is which of the 3 you choose, [Confused] zucchini, banana or pumpkin, all are delicious.

I suppose if I substitue Splenda for sugar this would be a good recipe to try for my family. Two diabetics in our crew so I'm always looking for new recipes that taste sweet without the sugar! Thanks!

Oops, I am Diabetic too and should always put the alternative amount to sugar. I use a product called SUGARLIKE, granulated sugar substitute, 50% less calories than sugar, one-to-one replacement. Its a Mrs Bateman product and can be seen o the website: www.bakingbutter.com
Now Splenda would also work, but Sugarlike is made especially for baking..... [Wink]
