4 nice cucumber size SQUASH
3 yellow SQUASH
1 delicious apple size ONION
2 sweet PEPPERS with juice (hot if you
like spicy)
1 can of STEWED TOMATOES
4 large POTATOES

Wash thoroughly the squash and slice thin into a large soup pot....
Cut up onion, any size pieces are okay...
Open and pour can of tomatoes into pot...
Cube the potatoes into the pot...

Add a clove of garlic or two, salt and pepper to taste. Give it a stir and cover. Let simmer on medium flame for an hour. Check and stir often. It makes its own juice and you won't believe the aroma and the taste. Good served alone with bread and butter or as a side dish with any meats. In the summer when my windows are open, my neighbors ask "what is that wonderful aroma?"
Cut up peppers finely and add the juice....

GAGOOTS recipe:
4 squash are green and do not remove the skins

also add the peppers to the pot too.

Gagoots, [Big Grin] the aroma alone is worth the cooking not to mention the taste and its sooo good for you too. This is the dish I am asked to bring to all the functions I go to where we bring a dish. Its sooo eassy, and once you've cut the ingredients up and put them in a pot or a crock pot it does the rest by itself. I'll steal a line here from Ron Popele, [Wink] "set it and forget it."
