I am in search of a tasty jambalaya recipe with chicken, suasage, ham...you know, all the good stuff in it. I like spicy too. Anyone in here have a tried and true one? [Wink]

4 chicken breasts
4 c. water
4 Tbsp. oil
2 c. chopped onions
2 c. chopped green
peppers
1 c. ham, diced
16 small pork sausages cut into 3/4 inch pieces
3 cloves garlic
2 (no. 2) cans tomatoes
2 c. raw rice
3 c. chicken broth
2 tsp. salt
1 tsp. thyme
2 tsp. parsley
1/2 tsp. chili powder

Day before: cook chicken in water; remove from bones. Preheat oven to 350. Heat oil in skillet; add onion/pepper/garlic. Cook slowly until onion/pepper are soft. Add chicken, ham and sausage; cook 5 minutes. Add tomatoes with liquid, rice, broth and spices. Put in casserole dish and bake 1 hour. Refrigerate overnight. Next day, reheat at 350 until rice is tender.

I have another one, but it isn't as good. Hope this helps!

Queen, thanks so much for this. My mouth is watering just reading it. It is exactly what I was looking for. With the weather getting cooler here I'm thinking about different meals. I'll let you know when I make this and I will tell my family the recipe is from the queen. [Razz]

okay, now I'M needing a recipe. We are having a bake sale at work for United Way to raise funds and I need to take something I bake. This is for next week so I have plenty of time. I just need to come up with something different...something sweet, easy to make, and can be divided into baggies and sold individually. Any ideas from you bakers? [Confused]

Queen, I made the jambalaya yesterday and we loved it. I used shrimp instead of chicken, added another can of tomatoes (because I let too much of the liquid boil off and we love tomatoes) and added some red hot pepper because we like our stuff hot. We had some hot crusty bread and butter and called it a meal!

It's a keeper and I can't wait to serve it for company one time. Thanks for sharing. What would I do without the gals in here. Saturday I made Candice's empanadas.

I have found that when I come in and simply ask for recipes...I receive. I like making tried and true recipes. Anyone else enjoy cooking?

Oh I do...about as much as having a root canal.

But seriously folks, I do enjoy baking for the holidays. Especially things that I can make in volumne and package up pretty and give out as gifts to elderly, shut-ins, people without teeth...I'M SERIOUS! Most of the men at the VA home don't have teeth, or only part of them, so it is good to keep this in mind when baking "stuff" for them. See...you thought I was being silly.
