This is a great way to use up that left over chicken!

All you need is one cup chicken, diced
16 ounce can black beans, rinsed and drained
1 cup shredded cheddar cheese
1/2 cup salsa
1/4 cup sour cream
8 tortilla shells
10 ounce can enchilada sauce

Mix chicken, beans, 1/2 of the cheese, salsa, and sour cream together in bowl. Spread mix in each shell and roll. Place shells seam side down in greased, 9x13 baking dish, spread enchilada sauce over the shells, and top with the remaining cheese. Bake in a 350 oven for 30 minutes.

This is a simple recipe and the kids love it! What more can you ask for? [Big Grin]

Be creative...you could use beef, hot/mild salsa, different cheese...whatever!
