Peanut Butter Chocolate Chunk Cookies

½ cup butter, softened
¾ cup chunky or creamy peanut butter
¼ cup sugar
½ cup dark brown sugar, packed
1 large egg
½ teaspoon vanilla
1 cup flour
¾ teaspoon baking soda
1½ cups of semisweet chocolate chunks

Preheat oven to 350 degrees. In a bowl, cream the butter and the peanut butter until creamy. Add the sugars and mix well. Add the egg and vanilla and continue to mix until well blended. Stir in the flour and baking soda and mix until flour is completely incorporated. Stir in the chocolate chunks. Drop by tablespoonfuls on a parchment line baking sheet and bake for 10-11 minutes. Remove from oven and cool on wire racks.

Ever tried this same cookie but making them chocolate cookies with peanut butter chips instead of chocolate chips, they are to die for.

Last week I experimented with a vanilla cookie with chunks of dried strawberry in them. I just cup up the fresh strawberries and left them sit out overnight then added them to the cookie dough when I made it. They make a great tea party cookie.
