ZIPLOC OMELET

(This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelet !!!)

Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.

Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.

Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.

Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.

Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.

Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.

Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.

Thursdays are my day at trhe Nursing Home making breakfast goodies or maybe lunch. Today my 2 helpers and I brought in all sorts of fixins neatly cut up and several containers of Egg beaters. We let each resident put their name on a bag and add whatever fixins they wanted to to their egg beaters and then we put then into the hot water to cook. It was priceless Dianne , you should have seen their faces light up and oh my these omelets were the best any of them ever tasted. We had bacon on the side and either tomato or pineapple juice and tea or coffee. I told them I got the recipe from Sammies mom and they said to thank you. They already ordered the same thing for next week. It was a hoot.

We've got this on our breakfast menu for our family reunion in August - one BBQ for 9 people. With one big pot of water and nine zip-lock bags, this should be a real winner - and easy to clean-up afterward too!

Dotsie, these reunions began about 18 years ago as an alternative to getting together at Christmas (so my brothers could enjoy staying home with their children and not worry about travelling in that crazy winter weather). The reunions were always just for our immediate family (Mom, Dad, brothers, spouses and children). The number one rule about the reunion is that they had to be held in neutral territory so that nobody got burdened with the bulk of the cooking, cleaning and expense...there is a very good reason for stipulating that particular rule!

So for about 18 years, we've picked a different town in Ontario and stayed at a motel/hotel. Up until two years ago, the reunions were always at Thanksgiving. But the cost of staying anywhere at Thanksgiving was getting too prohibitive for most of us, especially those with children in university. So we cancelled the 2005 reunion in order to change the timing to a weekend in the summer. This year we're going to a lodge in Parry Sound (on Georgian Bay) near the end of August. This will be the first reunion away from restaurants and shopping facilities (eating and shopping together have always been key [and fun] elements of our reunions!) so it will be interesting to see how we manage.

(The year that Mom was in hospital here in Ottawa, we had the reunion here, with most of the family staying at our house. It was very hectic and reinforced our need to re-establish the original number one rule for the reunions! We do have most of the family here for a week every Christmas and often another week in the summer, so hubby and I have decided that twice a year is enough!)

Dotsie what no one seems to understand is that my free time is terribly limited as I work at Mystic Publishers office on Mondays, Wednesdays and Fridays. I do the Nursing Home on Thursdays and my editing on Tuesdays at home while answering a dozen or more phone calls. I try to keep Saturday free for grocery shopping, hair cuts, and whatever else pops up during the week. When I have nothing in house to edit I jump into BWS and NABBW to post. In between all this other stuff theres going to Tai Chi and to exer-walk the pool. I should weight 95 pounds with all the stuff I do and yet seem to find enough time to stuff my fat face and be overweight, because I eat at night once I have stood still for awhile. Thats why I am unable to meet with some of the "vacationing" women who come here. I know no one understands but I refuse to go to the strip during the daytime when the traffic is insane. I just don't have enough free time for all that. I would meet with them if they would come off the strip nearer to my area, there are many casinos here too. I am not on vacation, I live and work here....I should be retiring and it seems I'm working harder than ever.
