Here's the easiest banana bread recipe I've ever seen.

Preheat oven to 350 (325 for glass or coated pan)

Ingredients:

1/2 stick of butter or margarine ( 4 tbsps)
1 cup of sugar
3 bananas, any size, any ripeness
1 egg
2 cups of flour
1 tsp. baking soda
1/2 tsp. baking powder

Cream together butter and sugar. Add egg.
add mashed bananas. Mix together dry ingredients
and add to batter.

Pour into buttered loaf pan. (If you want to make mini loaves, this makes 3). Bake for 60-75 minutes. I usually check after 1 hour. Press the top center or insert toothpick.

For a really yummy variety, add a handful of chocolate chips!

Well...I had 3 bananas, until hubby ate 2.
Next thing you know...he'll be swinging from the tree.

My son asked for my special brownies and so I am going to make them a few days before Christmas. Into my brownie mix I add, coconut, walnuts and then sprinkle in some crushed peppermint candy canes. Once baked mix some crushed candy cane into the icing and frost....very festive and good.
