Chicken & Vegetable Tortilla Roll-Ups

1 pound boneless skinless chicken breasts cooked..
1 cup chopped broccoli.
1 cup diced carrots.
1 can (10 3/4 ounces) 98% fat-free condensed cream of celery soup, undiluted.
1/4 cup reduced fat (2%) milk.
1 tablespoon dry sherry.
1/2 cup grated Parmesan cheese.
6 (10 inch) fat free flour tortillas.

1) Preheat oven to 350*F. Spray 13x9 inch baking dish with non stick cooking spray, set aside. Cut chicken into 1-inch pieces, set aside.

2) Combine broccoli and carrots in 1 quart microwavable dish. Cover and microwave at HIGH 2 to 3 minutes or until vegetables are crisp-tender, set aside.

3) Combine soup, milk, and sherry in small saucepan over medium heat, cook and stir 5 minutes. Stir in Parmesan cheese, chicken, broccoli and carrots. Cook 2 minutes or until cheese is melted. Remove from heat.

4) Spoon 1/2 chicken mixture onto each tortilla. Roll up and place, seam side down, in prepared baking dish. Cover dish and bake 20 minutes.

Vegetarians can replace the chicken with cauliflower....

Oh certainly Searcher, you can add anything you or the family might llke. My recipes all leave room for anything else someone wants to add and improve it in any way....thanks Brendan hope your family likes them....its a fun dish too. [Big Grin]

Brenda one of the most fun dishes I've made lately and put on Favorite Recipes is my Ole' Chicken its so good and fun to make and the kids will love it. Open it up and copy it, thats my dinner tonight too...While your in there check out some of the other recipes too, there are sime really good ones.

Well, I was doing just fine copying all the healthy recipes...

when all of a sudden I ran across, To Die For Ice Cream Cake, Monster Cookies, Coconut Sour Cream Cake, 100 Calorie Chocolate.

While reading.. I realize there is not one tinge of chocolate in the house. Normally, I keep a stash, kids find it... and then no one knows nothing, blank stares, no expression, with the famous "I don't know".

Off to the store I go.
