Here goes ladies, easy and so good and good for you too!

Technicolor Vegetable Skillet

INGREDIENTS;
2 teaspoons olive oil
1 cup baby carrots, 2 inch pieces, scrubbed
1 1/2 cup of pattypan squash, ends removed, cut into wedges.
1 2/3 cup of green beans, cut into 2 inch pieces and blanched.
1 cup California ripe olives, whole.
1 1/2 teaspoon thyme, chopped
1 teaspoon fresh garlic, minced
1/2 teaspoon salt
1 teaspoon unsalted butter
2/3 cups red beets, steamed, peeled and chopped.
DIRECTIONS;
1) Heat olive oil in large skillet over medium heat. Add: carrots, cook and stir 4 to 5 minutes, until lightly browned.
2) Add squash and continue to cook 3 to 4 minutes, until tender. Stir in green beans, olives, thyme, garlic and salt and cook 2 to 3 minutes until heated through. Toss with butter and sprinkle with beets...

Makes 4 servings. Great eaten alone or as a side dish.
120 calories, 7g total fat, 14 carbs, 5g fiber. Per serving.

Chatty, It sounds delicious but I'm not sure what pattypan squash is. Can I use Zucchini?

TVC15, what I think pattypan squash is those little scalloped ones that fit in the palm of your hand. I have some in my fridge right now so this would be a great recipe!! (gotta get some beets though.) They're a little firmer than zucchini but similar taste.

I would probably put this recipe over spaghetti. That way my husband would eat it too [Wink]

Cuz, that sounds sooo delish!!!! Is that from THE cookbook? Is it one of Grandma's recipes? I will be trying it out real soon.

Yes it is one of the recipes in the cookbook but alas not tally Grandmas. I spiced it up a bit. Yes you can use zuccini if you want to and pappypan squash are the little ones also called coin squash in some circles...Bon-a-petite ladies and yes this would be great over spaghetti too. [Wink]

I'll give it a try! That cookbook must be a goldmine of recipes. I like the old ones. My Mom has one and all of us girls are fighting over who will get it when that day comes. I think I should be the one, since I'm the oldest! I'm not ususally like that at all but there are some things worth fighting for!
