This recipe has been sitting on my desk for a couple weeks. I'm cleaning my desk so it's time to share so I can get this in my recipe book. This is delicious...and it's great for when you have leftover corn.

4 ears of corn, cooked and removed from cob

1 red pepper, diced

4 medium tomatoes, chopped

1 T red wine vinegar

1/4 cup olive oil

fresh marjoram,basil, or whatever herb you prefer

salt and pepper to tast

1 cup crumbled feta cheese.

Combine and mix in bowl. Serve chilled.
