Would love to have your comments on a new blog of mine, Chew on this! It's not for money, it's not for profit, it's just for fun. I just happen to like two things...writing and food. I'm sharing my latest meals, tips, and ideas for healthy eating. I just started this yesterday, so there are only three or four post. Given time though, I hope to have at least three a week. I hope you enjoy it!

What surprises me the most about this blog is the fact that no one commented on the mushroom bake. Am I the only one who could eat them out of the ground? I love these things! I've baked them twice using this simple recipes and I can tell you now, they are LAIR-A-PIN! Moving on... how does your salad dressing weigh in?

I spent time at summer school beside a Danish lady who when we went to choose our meals choose salad as a starter at lunch/ dinner rather than a sweet..she said she does that every day.I feel she knew a good thing...cultural differences in food is so interesting.Any local to you themes Boomers.. In Scotland there is the habit of afternoon tea with fancy baking..not good really..OK now and again..

And how do you fix them, Lola? I would love to know. I've started buying more and more of them because I love them baked with cheese (all fat-free) as a side dish and just hate running out. I don't live near a grocery store, so it's a trip to town, literally, to restock. Today I'm blogging about a fat-free treat for the kids, or you...I make them for the grandkids but if they don't come buy, guess who eats them? Yeppers. I usually call my daughter-in-law and say don't come by here, I have the jungle rot, scurry, and berry-berry...she says, "You've made the JELL-O things, haven't you?" Busted... Thanks for the jello recipe. I'd surely make them. Here's one. After you've evicted the tenant dwarf and his gang from the mushrooms: 6 cloves finely chopped garlic (more if you don't like your neighbours ) olive oil sherry lemon juice paprika Saute the mushrooms in olive oil until it softens then add the garlic, lemon juice, sherry and paprika and cook until the garlic has softened as well. Season to taste and serve on buttered (or cream cheese) baguette with a garnish of chopped parsley or dill. I also cook my portobellos like you do but would occasionally add spinach on top of the cheese. (no PAM here though so I clog my arteries with butter). And, a slice of tomayto-tomahto. Mushroom omelette with feta and spinach is also yummy.

JJ, I just left a comment about your Red Peach Salsa...it sounds so scrumptious...I love anything with peaches in it.
Chatty, we do the same thing with our eggs. I have an egg every morning (long story why) and always throw in "leftover" pieces of veggies in...red onions, grape tomatoes, mushrooms, and celery flowers are my favourites, with cheese melted on top (for the calcium). Yummmy. It IS like having a salad for breakfast.

Chatty, you got that right! My first big seasonal craft fair was 2nd weekend in September down by the beach. Good weather and sales I haven't been able to go back to Hollywood Market due to the heat, but it's allegedly cooling down soon. Smaller festival in a local park this weekend. I spent most of the summer on website organization & infrastructure and am very glad that's over. A local gallery which sells my work wants 50-60 new pieces by next Wednesday, so that's my current big project.

Today we have Shoepeg Corn Salad which I made at 5:30ish this morning and then promptly dropped the whole thing on the kitchen floor on the way to the frig...BEFORE coffee. Later today I thought I might try running over my foot with the car or maybe giving myself liposuction with the vacuum cleaner. I mean, why not. I'm on a roll. Sigh...

Hmmm...well you can make regular Southern cornbread and I'm not talking about that Johnny cake that has sugar in it, either. Or...you can make the Sour Cream Cornbread that mom usually makes with this dish. Here is the SOUTHERN CORNBREAD RECIPEPreheat the oven to 425°. INGREDIENTS2 4 tablespoons shortening (or bacon drippings) 1 1/2 cups white self-rising cornmeal 1/2 cup all-purpose flour 1 egg 1/2 cup buttermilk or sweet milk 1/4 teaspoon of baking soda if using buttermilk DIRECTIONS:Put shortening into an iron skillet and put in the oven while it's preheating. Combine the cornmeal and flour, then mix in the egg and milk. Mix should be like thick pancake batter. If not, you can add some water to it. Take the hot pan from the oven, pour some of the melted shortening (a tablespoon or more) into the batter, then pour all of the batter into the hot skillet. Place back in the oven and bake for 20 to 25 minutes, until the outer crust is golden brown. Flip over onto plate. Eat yourself silly... Here is the Sour Cream Cornbread Recipe

Martha White's buttermilk cornmeal mix in the big bag is awesome...I heat the iron skillet with a big dallop of Criso in the oven until it's hot...then I pour in the cornbread mix...it sizzles around the edges...I've had so many compliments on her cornbread...the secret...Crisco. I melt it and pour it in the mix as well...I can hear the arteries closing as I type...but, it issssssss good. I liked Jiffy mix until I tried Martha White's...hands down so much better and JJ I'm with you...no sugar!

I made red beans with Tony C's in them...(they are so good I slap any mama within reach)...will bake a fresh skillet of cornbread, turnips, mashed potatoes and chicken. YUM...That's Larry's b-day lunch...for desert, a party with his family and friends.
