Now for those always dieting but having to fix family meals I have an idea which works well for me. Every now and again chicken is on sale at say .59 cents per pound. I buy about 10 birds at this low low price. Then place 5 in a roaster and cook them. When cooled strip off the meat and put into plastic bags, enough for a meal for one or more if you choose. Place safely into freezer. Cook the rest and repeat proceedure. Now you've been able to take advantage of the sale, plus you can cook whatever your family likes and still pop your chicken into the microwave with a vege and you have your diet meal. This is such a time and money saver. Yesterday they had cooked nice size shrimp on sale for $2.99 per pound, usually $6.99. I snatched up 2 pounds and made 4 full packages for my diet meals. You can do this with any meats also... [Big Grin]

chatty, you're a;ways thinking. Great ideas. I've never thought of freezing cooked chicken. I guess it gets eaten too quickly around here. [Eek!]

Thanks Chatty - we are stocking up on fresh berries, and corn here as well...=) Much better in season that out both tastewise and pricewise.

Well I use mine up pretty fast fresh, I grill it, bake it and saute it or I cook it sliced with the other indredients for Gagoots (Italian vegetarian stew.) I believe you should slice it(round) and then steam it, so its lightly cooked. After cooking, I lay the pieces out on a cookie sheet to freeze singularily. This way they will not stick together in a glob. When hardened I freeze them in a large plastic bag and that way I can use as much as I need when I want to....works great. [Razz]

Chatty, I never would have thought of that. Thanks. Here's another way to bake zucchini:

Slice and place on baking sheet that has been sprayed with Pam. Butter and sprinkle with fresh parmesean cheese. Bake or broil until they begin getting a little brown. It's just like eating potato chips.

I can always take soemthing healthy and add cheese and butter to make it fattening!

Has anyone tried smoked zucchini? A lady told me she smokes hers just like beef...I can't imagine it. Anyone smoke veggies?

I've never tried smoked veggies. Sounds interesting. I love fried zuchinni!
I'm going to try the butter and cheese thing too!
