I just love cheescake, this pumpkin cheesecake sounds scrumptious.

Fluffy Pumpkin Cheesecake

Ingredients

1 Ready Crust Graham Cracker Pie Crust (6oz.)

Filling

1 pkg. (12 oz.) cream cheese softened

1/2 cup sugar

1 1/2 tsp. pumpkin pie spice

1 cup 100% pure pumpkin

2 eggs

1. Mix cream cheese, sugar and pumpkin pie spice on medium speed. Stir in pumpkin.

2. Add eggs and mix until blended. Pour in crust.

3. Bake at 350 F for 40 minutes. Cool. Refrigerate for 3 hours or overnight.

Hint:

Soften cream cheese in mircowave on high for 15 to 20 seconds.

Serves; 8

Ever bought a small pumpkin washed it thoroughly and then sliced it thin and dipped the strips in a beer batter or any kind of batter and deep fried the strips, oh so food...and this cheesecake sounds wonderful, so much lighter and better than heavy pumpkin pie.

Hubby makes an incredible pumpkin soup...he just cleaned out three pumpkins and stashed the pulp away in the freezer. But now I'm wondering if I should take some out and experiment with your beer batter idea, Chatty.

I love cheesecake too, and have long wanted to make pumpkin cheesecake. But too exhausted these days, and still fighting off a very nasty flu-bug...so I'll have to wait to try this recipe. Sounds good!

chatty, I've never heard of that. IS it good?

I love cheesecake, but it doesn't like me too much. I'm lactose intolerant, but this one sounds like it's worth aching over!

We made butter cookies last night with our big pumpkin cookie cutter. I use the recipe for most holidays. I have cookie cutters for all seasons. I like the big ones best because I can crank them out. The little ones take forever.

What does it mean by 100 % pure pumpkin? Is that just a can of pumpkin? I'm looking for a better recipe than the pumpkin pie off the Libby's can of pumpkin. Any suggestions? Thanks!

My dear friend it means 100% pure pumkin that is does not have any added salt or sugar in it . The Libby's can pumkin I use all the time for my pumkin bread . You should see all I have baked for christmas .Applesauce cake and pumkin bread my freezer is full. I can check my cookbooks for you on another pumkin pie recipe .
