Baked Salmon Seasoned Bread Topping - 08/11/05 02:13 AM

Simple tasty salmon entree. Mayo and onions add a sweet and creamy flavor...perfect with the crunch of the bread crumbs. Excellent served with rice pilaf and fresh asparagus.

1 tablespoon olive oil
1 small onion, chopped
1/2 teaspoon minced garlic
salt & pepper to taste
1/2 cup herb seasoned bread crumbs
2 tablespoons mayonnasise
2 Salmon fillets (about 1" thick)

Pre-heat oven 350 degrees. Grease a baking sheet, set aside.
Heat oil in a skillet over medium-high heat. Saute onions, garlic, salt & pepper until tender. Transfer to medium bowl, and mix with bread crumbs and mayonnaise. If need be add more mayo, looking for a paste like consistency.
Place salmon fillets onto greased baking sheet. and press crumb mixture on top...about 1/4" thick.
Bake for 10 minutes in pre-he3ated oven or until salmon flakes easily with fork, then broil for 5 minutes to crisp the top.

Quick easy meal.

Brenda, I copied this one down, sounds so good and I love fish of any kind...Nothing better to me than crisp bread crumbs on anything....
