Breakfast foods?

Breakfast foods? - 02/22/10 02:08 AM

What does everyone eat for breakfast? I know this sounds like a silly question, but I'm so sick of my cereal and occasional banana. I'm not a big breakfast eater, not reaaly in to making eggs or anything like that. Just wondering what everyone else does. I'm looking for something healthy and possibly without carbs, but am open to anything.

Re: Breakfast foods? - 02/22/10 02:28 AM

Dots try buying a bag of frozen mixed veges and a carton of egg beaters omelet mix. Then in some butter or msrgarine, whatever you prefer, add some chopped onion (chop a large one ahead and keep in fridge) some of the frozen veges and then the egg mix. This makes a 'fast' and delicious omelet. I also add some cheese.

I love a bagel with cream cheese fruit and cup of hot tea.

Or try some fresh berries with cream. I add mine to oatmeal usually.

Or what about toaster waffles also frozen, quick and easy topped with berries.

You can have whatever you want for breakfast, no one says it has to be breakfast food as long as you eat something to start your day off right.

My mother likes chipped beef on toast or she'll eat a piece of broiled fish topped with cheese and a side of veges. Mom is 89 going to be 90 in April and has never been overweight one pound.

Chatty, maybe your mother ate the bigger meal of day at breakfast?

Dotsie, I'm pretty boring and I know it. Not alot of vast variation at home for breakfast. Usually it's half cup of microwaved oatmeal with 1/2 cup of skim milk. Plus tea with milk. Often with a fresh fruit on side and that will depend what's in season. That's why I love local fruit in season time. Sometimes will have a small slice of fat-free artisanal bread that we buy from our favourite bakery. (could be rosemary-olive bread, cranberry-pistachio bread, fig-anise bread...)

It's quick and easy because often I'm jumping onto a bike afterwards.

But when we go on vacation, I do have bigger breakfasts, often because it's part of the hotel deal. But when that happens, I tend to make that big breakfast...more like a brunch. If there's a long bike ride for the day meaning well over 70 kms., then I do try to eat a bigger breakfast..with at least 1 hr. to digest if possible,..before cycling.

I haven't prepared eggs for breakfast in the last....15 yrs. But I will have an egg if we vacation somewhere for breakfast and if convenient/makes sense for stomach at that time. smile

I tend to prepare eggs for supper, ie. egg stir fry dishes, scrambled or omelet with veggies, savory egg custard, etc....for supper. It would be protein, in lieu of any meat for me. I personally find eggs almost too heavy for breakfast...unless I cut back on supper or go on a long bike ride.

Jack makes his own breakfast, he tends to like his fat-free yogurt with his own homemade applesauce (that he makes huge batches in advance), maybe a bagel or slice of bread and orange juice. I could not eat bagels often for breakfast.

Re: Breakfast foods? - 02/23/10 01:51 AM

Orchid, do you or Jack have an easy authentic recipe for fried rice? I have a couple but mine never seems to taste like what I can get in the oriental restaurants and I like making my own.

Oh, and yes mother always eats her main meal of the day at breakfast time. My step father worked as the baker for their bakery so he worked 11:00 p.m. to 8:00 a.m. everyday, and when he got home it was his dinner time so mother made dinner then. Then before he left for work at night he had breakfast, usually cereal, fruit, toast and coffee. He also carried a sandwich for his lunch. That went on for 25 years until his passing. She still does the same thing only for herself...

Re: Breakfast foods? - 02/23/10 03:53 PM

Thanks. I love the idea of veggie omelets, but don't like to eat too many eggs, however will definitely do this occasionally.

I love fruit, but this time of year berries are pretty expensive so I eat lots of bananas with my cereal. Getting bored. Spring is coming!

I also eat big breakfasts on vacation. When we were in Aruba, we had a breakfast buffet every morning. By the last day, it had grown old.

Re: Breakfast foods? - 02/23/10 04:00 PM

I usually pop a frozen waffle into the toaster first thing, just to get something in my stomach with the morning meds. Then, a couple of hours later, I have yogurt with fruit. My body chemistry has changed. I used to be able to have cookies and coffee for breakfast. I don't drink coffee anymore. About 4 months ago, after having coffee since I was 15, I just stopped. Just stopped! Didn't even think about it. No cravings, no missing it, no nothing. Hmm, I wish I could just stop with some of my other bad habits, or just "start" exercise in the AM. About the body chemistry: my husband has been laid off since November. The blessing in this is that he is such a good cook. We call our kitchen "Woody's restaurant and bakery." I've been eating sweets for 4 months. Yesterday morning, I decided to have a applesauce walnut spice cupcake with cream cheese frosting. I was thinking of the good ingredients: eggs, applesauce, walnuts. No more than 15 minutes after eating it, I had a total body crash. I was deek and wizzy, I mean weak and dizzy, nauseated, and I had to lay down. This happened to me a couple of times during the holidays. Now I know it's for real, a hypo-glycemic rise and fall. So, back to the waffles and yogurt!

Re: Breakfast foods? - 02/24/10 12:38 AM

I have a toasted English muffin with pomegranate seeds and fat free cream cheese.....or an egg beaters scrambled with one laughing cow cheese on top of a toasted English muffin or a piece of dry toast. Or...oatmeal with a banana and some Stevia...or...Special K cereal with strawberries...or chocolate. Hey, I never said I was perfect.

Re: Breakfast foods? - 02/24/10 01:35 AM

what is Stevia? Laughing Cow cheese sounds like a good choice.
Posted by: jawjaw

Re: Breakfast foods? - 02/24/10 05:28 AM

Stevia is a sweetener that takes the place of sugar, sweet-n-low, splenda, etc...it is suppose to be better for you.

I've been tempted to try the Chocolate Cheerios, but am refraining. I eat the basic Cheerios probably five days a week. Boring.

Re: Breakfast foods? - 02/24/10 04:00 PM

I usually eat either oatmeal with fruit in it, or one scrambled egg with whole wheat toast and 1/2 grapefruit. We have french toast or waffles a couple of times a month, usually on weekends.

When I was a kid, we never once changed our breakfast routine. Every weekday we had hot cereal, (if we finished that we could have cold cereal - a treat!) every Saturday was some type of eggs, and every Sunday was either pancakes, waffles or french toast. Looking back, I realize now how lucky I was to have such great food all week long for breakfast.

Re: Breakfast foods? - 02/24/10 04:06 PM

Oh, Dotsie, I agree that is so boring! Live a little! Try the chocolate! I don't know how I got out of the habit of adding sweeteners. Does your husband have to eat any certain thing(s) for breakfast re: diabetic? Does anyone use soy milk with their cereals?

Re: Breakfast foods? - 02/24/10 10:07 PM

During the week for breakfast we have old fashion oatmeal with blueberries, juice, yogurt, and coffee. On weekends, sometimes I make blueberry muffins, cinnamon breakfast cake, or eggs.

Re: Breakfast foods? - 02/24/10 10:10 PM

All I ever buy and use is Soymilk. Love it and its better for me than cows milk.

Dotsie, the reason Egg Substitutes are so good is they taste exactly like a real egg with all the cholesterol removed, read a carton at the store, you may be surprised.

Re: Breakfast foods? - 02/25/10 03:12 AM

Cookie, your weekends sound yummy!

Re: Breakfast foods? - 02/25/10 03:44 PM

I think we bought 6 real eggs ..once in the past 5 yrs.

Instead we buy egg substitutes or egg whites. I tend to buy the latter. It tastes lighter to me which is what we want. As I said earlier in thread, we tend to prepare egg dishes..for supper at home. Hmmmm....only about 2-3 times per month. It's just a natural evolution of things. I don't feel a powerful need to eat eggs more often nor do I miss it when I don't have it.

Fried rice that I do, chatty is how my mother does it which is different from the restaurant. I think the restaurants use abit too much soy sauce. But the general process is I think is to stir fry cooked rice by itself and then combine it with stir fried eggs & with veggies already nearly done. Then stir fry again quickly everything, etc.

However, my mother omitted the stir frying of rice separately and just put in the rice with the stir fried eggs and veggies, which gives the whole dish a much fluffier and different taste than restaurant style.

I actually gave up trying to do stir fried rice with eggs, etc. Instead I simply have eggs stir fried/scrambled with veggies, onion and garlic on the side with rice. That alone is a meal in itself..for supper.
----------------------------------------------------
Oatmeal is considered a good fast absorbing carbohydrate that alot of people who exercise early in the day, eat. However I never eat the huge bowls of oatmeal that one might see others have. it's just half a c. of oatmeal with some milk. I have oatmeal that has no sugar.

I'm not pure because my downfall is after a bike ride, I might have a scone, or muffin and coffee.

Meredith, they sound delish, but I'd never go to that much trouble for breakfast. Call me lazy, but unless it's a special occasion, my breakfast has to be one or two ingredients. I'm still eating cereal with banana. Looking forward to mixing it up with some good berries soon.

I do the same, MA. Only I fault myself for thinking this ALL the time. Which I don't. Illness sometimes can be a gentle reminder to get back in the game. If only I paid attention! Most of the time I do, but...

Re: Breakfast foods? - 03/04/10 12:34 AM

I never use to eat breakfast say maybe 15 years aqo, and I mean never. I was up, dressed and out the door. Now for the past several years I wake up, shower etc., and am starving for breakfast, actual hunger pangs and all. I don't even remember when things changed either, very strange!

Later today I am making my famous, and it is too, Ham Salad. I made it a coupole of times and my ex when we were married, took it to work and gave bites to people asking. It was so popular they began giving him orders for the stuff. I was making ham salad every week and selling it plus my son always has to have a large container too.

Many people relocating from the Midweswt, and New York said it's impossible to get good ham salad here like back home, and they are correct. I make it the old fashioned way and it is to die for. My son asked me to make some when he was here yesterday but I didn't have any ham. It's normally what I am asked to bring for parties, that or giant stuffred mushrooms.

HAM SALAD - 03/05/10 01:29 AM

Blondie, none of my recipes are a secret, well almost none. I am happy to see them copied, used and know that my friends, and their familys enjoyed them...

I always make a lot because it keeps in the frig for a long time to make sandwiches or adorn a salad.

HAM SALAD

Ingredients

Food PROCESSOR
1 (10) pound ham, already cooked.
1 large green pepper, cleaned and chopped into small pieces
1 large onion, chopped into small pieces
1 cup mustard
1 1/2 cups Miracle Whip
pepper to taste

Directions:

In a Food Processor put half your ham cut into bite size pieces. Grind ham until all pieces are ground well.

Add half the onions, half the green peppers, half the mustard and half the Miracle Whip, and pepper. Then grind again until all mixed well together into a paste like mixture...
Scrap the ham salad out of grinder into a large bowl.

Begin again with the other half of ham pieces, onion, green pepper, and black pepper. When the second part of all are completely ground add all together into the bowl.
Taste it!
If you think you need more Miracle Whip add to your taste.

Place in frig for an hour or so, it is much tastier cold the next day. This is a joy to eat in a sandwich on any bread or toss some into a salad like you would tuna.

Re: HAM SALAD - 03/05/10 05:14 AM

Thanks for sharing this recipe with us Chatty!

2 questions...

1. do you prefer a specific brand of ham or doesn't that matter?
2. what kind of mustard ?

I think my husband is going to go crazy for this! He loves, Chicken salad, egg salad , shrimp salad...but I have never made Ham salad...Thanks so much.

Re: Breakfast foods? - 03/05/10 03:44 PM

I eat breakfast every morning. One of my favoutites is a bowl of instant oatmeal topped with a banana and walnuts. I put a little vanilla soy milk in it too.

On the weekend, I sometimes make french toast. I add cinnamon and vanilla to the egg-milk mixure. On my plate, I pour a little maple syrup on my french toast which makes it really scrumptious. Fresh strawberries or a banana goes well with this too.

I've been known to eat left over pizza or lasagna for breakfast. There's delicious any time of the day!

Re:HAM SALAD - 03/06/10 01:27 AM

Blondie,
No special brand of ham but the butt portion is usually the leanest part and don't forgret that ham bone will make fabulous Pea Soup if you freeze it for another time!!!

I use just regular yellow mustard, thats fine. Go easy on the mustard as you can always add more but it isn't the taste you'll be looking for all by itself. It is a nice addition to the taste when all mixed together..

Anne-Marie, me too with the cold next day pizza for breakfast. I prefer it cold anyway. When I use to make cabbage and noodles for dinner with pork chops my sons always asked me to make extra cabbage and noodles, so they could have them the next day for breakfast. Good way to start any day! I love that as well.

Re: Breakfast foods? - 03/06/10 04:30 AM

I have a very 'moving' breakfast (when I have it ... more about that later). When I do, it's AllBran and LSA with soy milk. I know everyone insists that we MUST eat breakfast, but my body doesn't like the idea much at all. I don't get hungry until about 11.00am. So I usually have a couple of big cups of tea for breakfast - as the protein in the soymilk is enough to keep me going until lunch - and this keeps my weight down too. My partner simply has to eat breakfast. So I'm beginning to wonder if there are at least two types of metabolisms - one that suits breakfast, fasting and 'going without' and one that doesn't. The problem is that any responsible nutritionist or medical authority could not be seen to advocate skipping breakfast, fasting, etc, since this can be detrimental to health if it doesn't suit your body type. But I eat very consciously, very healthily and take responsibility for my own body. So I give myself permission to eat when I'm grnuinely hungry - certainly it doesn't hurt for me to consume less in a world where most of the global population doesn't have enough to eat! I'm going to cover this topic in part 2 of my funny article "Have a Body Like an Avatar Alien". You might enjoy part 1 - I just posted it online recently. I wold LOVE your comments! http://babyboomergirl.wordpress.com Cheers - and have a great breakfast - or not! smile

Re: Breakfast foods? - 03/06/10 03:58 PM

I used to be like you babyboomergirl, not having breakfast much at all in my 20's and early 30's.

And my breakfasts right now, remain modestly small as I outlined earlier on type of food in this thread. So imagine, I used to eat even less.

It changed when I returned to cycling in my early 30's because I needed something in my stomach to do a bike ride early morning to get to work.. which was 13-16 kms. one way for 14 yrs., depending where I was working. usually the bike ride then and now, where we live in a different city, includes at least 1 hill 6-10% grade to chug up or more hills, depending what I feel like doing/how time I have.

It was also highly critical for long vacation bike rides when we travelled by bike for 5-6 hrs., each day that I eat a substantive breakfast. I have been in 2 different situations where I didn't eat much breakfast and I nearly fainted after cycling for 30-40 kms. in hot humid summer morning at 28-30 degrees C. Experiences like that are scary.

So I have this feeling if you engaged in high cardiovascular exercise early morning for at least 1 hr., that the body would require a breakfast earlier. With running and cycling if one doesn't eat,..a person is geographically stranded outdoors.

If I don't bike, but just walk to catch subway/bus, then a cup of tea, maybe with a fruit would suffice for breakfast.

I know my stomach becomes acclimatized to certain eating patterns and timing. It didn't used to be like that. But then, when I was much younger I didn't have to worry about weight, fitness since I had a high metabolic rate. I am petite and at an excellent fit weight (at age 51) but it does take more conscious regular effort on my part now.

Ann Marie, that sounds delish. I think I need to buy some instant oatmeal. I have a ton of pecans that I could use, and I always have bananas. Thanks.

BBG, I'm known as never skip a meal Bregel. I so wish I could skip a meal, but I get weak. Do you ever feel that way, like you have low blood sugar? If not, your lucky. So do you eat lunch at 11:00?

orchid, sounds like you know your body well. That's great.

HAM SALAD - 03/07/10 01:16 AM

Looking for something easy to make and soooo good. Try this recipe. My son just stopped in to get his share of the loot. I always make a lot so he can have a large bowl full to take home and it stays in the fridge for quite awhile for snacks. Makes a great sandwich for any occasion.

I wished to respond with a bit more detail for babyboomergirl:

In thinking about this, I realized that perhaps you and I might be similar (but not totally): we eat smaller breakfasts.

If I wanted a bigger breakfast on a regular basis, I had better start cutting back on size of supper!

Re: Breakfast foods? - 03/21/10 04:37 AM

Hi Dotsie,

I'm with you, I am bored with breakfast. But I have been eating a concoction I've mixed up that starts with a non-fat organic (Stonyfield) yogurt - plain or vanilla flavored. I season that with cinnamon and nutmeg, add fresh or thawed frozen blueberries, a sprinkle of chopped pecans - and top with some organic (Cascadian Farm) granola.

Brands I use are not crucial, but I avoid the yogurt that so heavily advertised as being good for your digestion, as it is full of additives and high fructose garbage.

I'm really trying to avoid eating anything containing high fructose corn syrup, which is in SOOO many food products these days.

But if you want to try something really different for breakfast, Steve is into eating those frozen burritoes that come in a bag - beef and bean variety does give you some good protein for a relatively low price -- and it's quick to fix..

Re: Breakfast foods? - 03/21/10 02:32 PM

I know it is strange, but I like lentils in the morning. I buy Amy's lentil soups, lentil dishes or any other healthier brand - canned or frozen. I enjoy the protein and love the bit of spice.

But first, I have a cup of coffee with a bit of dark cocoa and cinnamon.

Re: Breakfast foods? - 03/21/10 04:38 PM

For certain Anno I would have to eat beans around lunch, my system requires effort to digest beans but I enjoy bean dishes at restaurants. I rarely cook beans because of this minor problem for me.

Sounds just as a different...as tradtional ASian breakfast, which is rice congee..or a rice porridge cooked in a light soup broth with light green veggies or some chopped cooking meat on top. As you know, it's offered in major Chinatowns in big cities in North America. Certainly enough fans in Vancouver and Toronto. It's been rare I've had this type of breakfast.

My mother found the bread-tea or oatmeal thing easier for her in terms of feeding us. smile
