STRAWBERRY SYRUP

Makes 2 servings:

1 cup mashed fresh or frozen strawberries
2 teaspoons tapioca granules
1/2 cup water
2-6 drops of Stevia (or 2 tbls. sugar)

Cook the combined ingredients in a saucepan, bringing to a bubble and stirring constantly until thickened, about 5 minutes. Remove from heat and serve with french toast or waffles.

NOTE:
You can substitute blueberries or any kind of berries for the strawberries.

My daughter would love this, but what can diabetis sue this on that isn't all carbs? Help! Maybe sugar free ice cream?

I put it on whole wheat waffles, lower in carbs. Plus they sell whole wheat flour for pancakes too. And why not on sugar free ice cream, sounds yummy to me!

Yes it does. The whole wheat waffle is a great idea, or whole wheat pancake.
