Low-Fat Chocolate Mayonnaise Cake

1 cup low fat mayonnaise
1 cup artificial sweetener (or sugar)
1 cup water - room temperature
4 Tbsp. cocoa
2 tsp. baking soda
2 cups enriched, unbleached flour
1 tsp. vanilla

Glaze: 1/4 cup sugar-free chocolate syrup

1. Combine mayonnaise and sweetener. Then add water

2. Stir in all other ingredients except glaze

3. Mix for 2 minutes, until well blended

4. Pour into 9x13 pan, coated with non-fat cooking spray

5. Bake in preheated oven at 350 degrees for 35 to 40 minutes

6. Remove cake from oven, poke the top full of toothpick holes

7. Spread glaze while cake is still warm. Glaze will melt and moisten the cake.

8. Cut cake into 24 pieces, optional (I could eat the whole thing!!!)

Yields 24 pieces, 1 piece is appr. 132 calories
