This is a Southern Living recipe that the whole family loves!
Stir 3/4 cup of each of the following: brown sugar,chili sauce, and ketchup...with an envelope of dry onion soup mix. To that mix add a bottle of beer. Place 3-4 pound brisket fat side up, in a large roasting pan; pierce many times with a fork. Arrange 15 small, red potatoes, and 1 1/2 pound of baby carrots around the brisket. Next, simply pour the mixture over the brisket and bake covered, at 325 degrees for 3 1/2 hours, basting occasionally with sauce. Remove from oven and slice the brisket. Return to pan with sauce, potatoes and carrots. Bake, covered, for an additional 30 minutes. The flavor is scrumptious! It's sweet and not the best for diabetics, but an occasional treat is great! I cut the brown sugar way back and it was still good! I would think you could also do this in a crock pot.
