I agree Orchid, that's there's something important about the flattening process. I make my grilled cheeses in a George Foreman grill, so they are flattened. AND I prefer to add interesting additions, as you mentioned. Sun dried tomatoes, avocado slices, crisp bacon and a bit of sauteed onion or mushrooms. Multiple kinds of cheese. (NOT all at once!!!)
