SUNDRIED TOMATOE TURNOVERS


Ingredients:

1 sheet frozen pastry, thawed according to package directions
12 tsp. herbed soft cheese, such as Boursin or Alouete
12 tsp. minced oil-packed sundried tomatoes, drained
12 tsp. grated Parmesan or Romano cheese...

Directions:

Unroll puff pastry on a flat work surface and roll into a 14 inch square.
Using sharp knife or pizza cutter, cut pastry into 12 squares.

Spread 1 teaspoon of herbed cheese on each square, to within 1/8 inch of the edges.
Top cheese with sundried tomatoes and cheese.
Using wet fingers, wet the edges of each pastry square.
Fold over one corner of the square making a triangle.
Press down the edges to seal. Transfer turnovers to baking sheet, about 2 inches apart.
Bake 10 nto 12 minutes until puffed up and golden brown.
Serve warm or room temperature.
