Perfect Pea Soup

Ham bone or 1 pound chunk of ham
Bag of green peas
2 mediem carrots
1 large potato
1 small onion
salt & white pepper
1/2 cup of cream

1)The night before place peas into a bowl of water and let sit over night...
2)Place the ham/bone into a pot and cover with water and let cook over medium heat for about half an hour...Remove ham, save the water...
3)Shred the carrots, potato and onion
4)Drain the pea water and dump peas into ham water, add the carrots, potato, onion and ham...
5)Allow to cook on a low fire for a couple of hours stirring often.
6) add the salt to taste and white pepper. I use white so there are no black specks in the soup but you can use black pepper.
7)Cook another hour or until peas are disolved. Right before removing from heat add the cream and stir well. Let simmer 10 more minutes and then serve....

chatty, thanks for these recipes. I had leftover ham and made quiche. I always double my recipe and have two; one with veggies, ham and cheese, the other just ham and cheese. One of my friends lost her MIL this week so I gave them the veggie one with a little fruit salad.

I just checked the archives and was surprised to see I never posted my quiche recipe. I'll do that next time I sign on. It's so easy because you can use any meets, cheeses, or veggies.
