Quick and easy recipe, very tasty.

Chicken Broccoli Alfredo

1 Tbsp. olive oil
2 boneless skinless chicken breast halves, cut into strips (shrimp works well also)
1 jar of Light Alfredo Sauce
1/4 tsp. garlic powder
1 pkg. (9oz.) Fettuccine
2 cups fresh broccoli florets

Heat oil in large skillet. Add chicken or shrimp; cook and stir on medium-high heat 5 minutes or until no longer pink.

Stir in sauce and garlic powder; cook 5 minutes.

Meanwhile, cook fettuccine according to package direction...add broccoli florets to fettuccine for the final 3 minutes cooking time; drain.

Toss with sauce just before serving. Season with ground black pepper, if desired.

Found this recipe awhile back at kraftfoods.com, everyone in my house loves it...even better the next day.

Hope you enjoy!

This is the kind of food I cook during the week. It sounds right up my alley.

Last night I sauteed lots of veggies in olive oil and balsalmic vinegar. I used asparagus, onions, and red and green peppers. I also added some spices to jazz it up a bit. Happy eating!

Yepthatsme2, Welcome to our forum and this is something I would happily serve and will make it and try it out.

Now Dotsie that really is a weight reducing food assortment...and sounds yummy too.

Hmmm, I wasn't thinking of weight reducing, just using up the fresh veggies in the fridge. I can't stand throwing away food, but I do it on occasion. [Mad]

We keep all of our favorite recipes on our website (which anyone is welcome to visit). I must warn you though that while they are absolutely delicious, they are Weight Watchers recipes (I have a whole collection of their cookbooks) and do tend to have a bad side effect of causing weight loss if you actually eat the portion size specified. LOL. website is: http://homepage.mac.com/carlsands/blogwavestudio/index.html (then click on recipes on the left sidebar).

yep, I made this last night, but I didn't put the broccoli in with the fetticinni, chicken and sauce. I steamed broccoli and red peppers together and kept them on the side. Not everyone in our family likes everything all mixed to gether. [Wink]

I thought of all of you while I was in the kitchen.

Happy cooking.
