This was the winning recipe using Trader Joe's boxed corn bread mix! It would probably also work with other corn bread mixes, or baking from scratch. I can't recall my also-ran recipes with this product. I think one of them added strawberries to the basic mix.

Mix according to package directions, except reduce milk from 3/4 cup to 1/2 cup. Add the following:
spices (1 tsp. garlic, 1 tsp. cumin, 1/8 tsp. chili powder, 1/4 tsp. oregano, 1/2 tsp. poppy seeds)
1/2 cup pepita seeds
4 green onions, sliced
6 mushrooms sliced
8 oz. cottage cheese

cook at stated temperature, but add 10 minutes for the cottage cheese.
