Apple Bread Pudding

3 slices of whole wheat bread, cubed
1 1/2 Tbs. chopped walnuts or pecans
3 small apples, peeled and chopped
1/4 cup unsweetened apple juice
3 eggs
3/4 non fat plain yogurt or unsweetened apple sauce
1/4 to 1/2 tsp. lecithin
1/4 tsp. ground cinnamon
1 tsp. vanilla

Preheat oven to 350 degrees. Sprinkle bread cubes and nuts into a square pan coated with non-stick cooking spray.

Sprinkle in the chopped apples; set aside.

Beat together apple juice, eggs, yogurt, lecithin, cinnamon and vanilla until smooth; pour over bread and fruit in pan. Bake 30 minutes.

Press apples down into custard with a spatula, and bake an additional 20 minutes until custard is set.

Serve warm or cold.

This is one of the diabetes correct foods I make, if you aren't worried about adding calories or sugar, and prefer a sweeter custard, use sweetened appe juice...

What is lecithin? is this a spice ? I never heard of it .

Lecithin is an important natural source of phosphatidyl choline, inositol and linoleic acid. Choline and inositol are vital components of all cell membranes, and play important roles in cell growth and function.

Pleasant tasting Lecithin granules can be used in a wide variety of recipes. I sprinkle on cereals and salads, add to meat loaf and gravies, or mix with water or fruit juice. Each tablespoon contains 7.5 grams of Lecithin.

Besides adding all these health benefits to your foods, it emulsifies to make a dessert such as this, more creamy. Most health/natural food stores carry the granules...
You can leave it out if you want to. I should have said it was optional!

Now I remember, an emulsifier. I think in the 70s I took lecithin because some diet guide said it would emulsify my fat. The recipe sounds good!
