POTATO PANCAKES

ALSO KNOWN AS LATKES...

1# Russet Potatoes, peeled and grated
1 Medium yellow onion, peeled and grated
1 egg lightly beaten
2 tbls. flour
1 tsp. kosher or sea salt
1/8 tsp. fresh ground pepper
1 1/2 tbls. canola oil

Combine all ingredients except oil in a glass bowl.

Heat 3/4 tbls. oil in a non stick skillet over medium heat.

Drop 3 tbls. (1 per pancake) into oil and flatten each pancake with non stick spatula.

Reduce heat to medium-low and cook until golden brown, 3 to 5 minutes on each side. Thansfer to paper towel.

Repeat using all the batter and remaining oil as needed. Serve warm...

Traditionally served as side dish with sour cream or chunky applesauce.

I make mine for breakfast and often crumble bacon into the batter before cooking, or small bits of ham. You can also add your favorite vege to the batter.
For breakfast I serve with maple syrup...

I put a spin of my own on this recipe by using sweet potatoes or yams instead of regular potatoes. Add 2 tbls. of brown sugar instead of salt and pepper to the recipe. Boy are these ever good...

Ohhhh, I love latkes! Dad used to make them for us on Sundays when my oldest brother and I were kids. When the other two came along, he switched to regular pancakes, but would make the latkes on special occasions, if someone grated the potatoes for him (which my younger brothers were always very eager and happy to do!)

My niece made them for us a couple of Christmases ago, but grated the potatoes too early - the mixture was dirty black by the time she could fry them...they looked terrible, but oh, they were SOOOOO good, especially with Quebec maple syrup.

Yep, you have to grate the potatoes right before you're ready to make them. I heat my oil when grating the potatoes. Also keep the juice squeezed out that will gather in the bottom of the bowl...For Christmas I am experimenting by putting grated walnuts into the sweet potatoe batter and a smidgen of coconut with the brown sugar...My pleasure Eagle!!

For those of you who don't know, latkes are a millenia-old Hanukkah tradition. Holiday starts tonight and we'll be making our latkes tomorrow. We're doing sour cream this year but fruity yoghurt is also a good topping. Thanks for the recipe
