New blog w/recipes - 11/17/05 12:46 PM

I started a new blog tonight with recipes. I'm hoping to put new recipes up frequently, and started off with 'Sweet Potato Casserole' - a dish more like a dessert than a vegetable. [Big Grin]

And I added da Queen's link as a way to 'feed your funny bone.' [Smile]

I intend to add recipes from family and friends, too.

My family loves sweet potatoes and I'm always looking for new ways to serve them!

SWEET POTATO PLEASURE

Take 4 to 6 nice size sweet potatoes, pop into a 350* oven for 30 minutes. When cooked through let cool and then peel. In a medium bowl mash the sweet potatoes well, add 1/2 cup brown sugar and 1/4 stick of butter....mix completely, then set aside.
In another bowl place a cup of sugar and cup of fresh coconut, take about four tablespoons of the potato mixture (baseball size) and begin rolling into a ball inserting a regular marshmellow inside the ball. Once the ball is formed, roll it into the coconut/sugar mixture coating it completely. Place all the balls on a cookie sheet. Right before you are ready to serve your meal, pop them into the oven for about 10 minutes at 300* you want to heat them but not enough for the marshmellow to melt or the potato will break apart. Remove, let cool a moment and place on nice platter and serve....Something different to do with those sweet potatoes....

I don't know about other women here, but I don't cook, hardly ever... but I absolutely LOVE reading recipes. How twisted is that?

Help!!!!!
Has any one tried the Kraft Marshmellow Fudge Recipe?
I have tried it twice, and I can't get the "gritty" texture from the sugar out of the fudge.
It says the temp should be 234F, and that's what I've done both times.
Do I need to cook longer.
I used to make this recipe years ago, and it turned out so nice a smooth. None of that gritty stuff from the sugar.
I've stirred the darn stuff until my arms are about to break off.
I want to get this recipe right because it tastes so good!!!!! Just the texture stinks.
Any help out there?

I did a "blonde" thing with the Marshmellow Fantasy Fudge!
I was using sweetened condensed milk, instead of evaporated milk!
Oh, and by the way, I am a natural blonde.
Just can't think of any other excuse to use for screwing up the recipe.

I added a cookie recipe today since I figure a lot of us are baking right now, but only eat a couple (or maybe three), or when you look in the mirror in January, you won't like what you see! [Eek!]
