It's snowing and I'm thinking about soups and stews. Anyone have any good recipes that the kids will eat too?

Yes ma'am...and it's guaranteed to make you slap your grandmaw

1 can Cream of Chicken Soup
1 can Chicken Noodle Soup
1 can tomatoes and green chilis (or a can of Rotel)
1/1 cup water
1 can of Shoepeg corn (or 1 can sweet corn)
1 cup Monterrey Jack cheese, or Cheddar/Monterrey Jack mix.

Mix everything together...when cheese melts, eat it.

Viola!

BEEF STEW

[Razz] Brown about a pound of beef cubes after dipping them in flour, salt and pepper.
Once meat is browned add a whole onion diced and
let simmer while cutting up several potatoes into med. pieces and carrots. About 1/2 pound each.
Add to meat and let simmer after adding one can of beef broth. Throw in some baby pea pods or frozen peas. Let entire pot simmer for about one hour, stiring occasionally...

VEAL or PORK STEW

Cube about one pound of meat using pork or veal.
Roll in flour, salt and pepper.

Place in large skillet with canola oil and let brown stirring often.

Add one onion diced.
Potatoes and carrots cubed, about 1/2 pound of each.
Add baby green beans and let all simmer after adding a can of stewed tomatoes.

Let simmer for about an hour until all flavors meld together. before serving sprinkle with grated Parmesan cheese.

Sound like you make your stew the way I do , but I make veal stew with McCormick Stew mix with the onions and potatoes and carrots and celery and some red wine for flavor . If you want to don't have to add the red wine . Dean likes it. Simmer for one hour on top of stove .. I make biscuts also. Just drop biscuts.

Going to make pot of vegtable soup this weekend . They are calling for more snow here. Yikes! [Wink]

Thanks ladies. I already make the beef stew, but have never tried pork stew. Sounds great. Yup, they're calling for more snow this weekend so I might be making this soon. [Wink]

The weather here in Vegas is finally what its suppose to be, today sunny and 70*. I'm hoping all the rain is done for awhile. Good eating ladies and hoping you stay warm and cozy.

MEDITERRANEAN CHICKEN STEW [Wink]

Vegetable cooking spray
2 whole bone in chicken breasts, 2pounds total
(skiinned and cut into quarters)
2 medium onions, 12 ounces total, sliced
2 large garlic cloves, minced
1 yellow or red bell pepper, 6 ounces seeded and chopped.
1 teaspoon turmeric
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2 pounds sweet potatoes, peeled and cut into cubes.
1 14 1/2-ounce can no salt added diced tomatoes, drained
2 tablespoons golden raisins
2 cups fat-free low-sodium canned chicken broth.

Lightly spray a covered nonstick pot with cooking spray. Add the chicken and brown over high heat for 2 minutes, turning chicken over. Lower and trasnsfer chicken on to a plate. Set aside. Add all remaining ingredients to the pot except the reserved chicken pieces. Bring to simmer and cook for 2 minutes. Return the chicken to the pot, cover and simmer for 30 to 40 minutes, until the chicken is nearly falling off the bones. Divide the sweet potatoes and chicken between 4 shallow soup bowls. Raise the heat unbder the pot and reduce the sauce for 2 minutes, stirring constantly. Pour some of the mixture into each bowl, serve at once....

ASIAN SOUP With SHREDDED CHICKEN and RICE [Razz]

4 dried black mushrooms
1 large clove garlic, minced
1 mall Serrano of Thai chili pepper, seeded and minced.
1 tablespoon fresh minced ginger
6 cups low-sodium canned chicken broth
2 teaspoons low-sodium soy sauce
2 6-ounce chicken breast halves poached and shredded.
4 ounces snow peas, trimmed
1 small carrot, 2 ounces, thinly sliced
2 fresh waterchestnuts, peeled and thinly sliced
(may use canned)
4 scallions, thinly sliced
1 cup hot cooked rice

Ina soup pot, combine mushroms, garlic, chile pepper, ginger, chicken broth, and soy sauce. Bring to a boil over medium heat. Boil for 2 minutes. Remove fromheat, cover and let stand for 30 minutes.Using a slotted spoon, remove black mushrooms and slice. Return to the pot. Bring mixture again to a boil. Add remaining ingredients, except scallions and rice. Lower heat and simmer, partially covered, for 10 minutes. Stir in scallions and ladle into wide soup bwls. Place 1/4 cup of hot rice in center of each bowl. Serve at once...

[Cool] WINTER VEGETABLE SOUP

1 tablespoon olive oil
1/2 pound leeks, trimmed, split in half length wise and rinse well
1 medium white onion, 5 ounces, chopped
1/2 pound carrots, peeled, thinly sliced on diagonal
2 large celery ribs, thinly sliced diagonally
2 tablespoon dried lentils
2 tablespoon dried split peas
2 tablespoons dried small white beans
1 teaspoon crushed dried thyme
1/2 teaspoon freshly ground pepper
2 quarts low-sodium canned chicken or vegetable broth
1 14 1/2-ounce can no salt added plum tomatoes, drained and coarsely chopped
4 ounces fresh spinach, well drasined and tough stems disgarded.

In large soup pot, heat oil over medium-low heat. Thinly slice cleaned leeks and add to pot along with the onoin. Cook, stirring until mvegetables wilt, about 5 minutes. Add remaining ingredients except tomatoes and spinach. Bring to a boil. Reduce heat and simmer, covered for 45 minutes, stirring occasionally. Add tomatoes and continue to simmer covered for another 15 minutes, until white beans are tender. Add spinach and simmer uncovered, until wilted, about 3 minutes, stirring. Ladle into soup bowls and serve...
Egg noodles can be made separately, place cup full into each bowl and ladle soup over the noodles.

I try to avoid the recipes. They make me ravenous, but these sound so warm. Brrr. It's 40 degrees here.
