SPANISH SHRIMP

Serves 4

1 tbsp + 1 tsp. extra virgin olive oil...
2 medium yellow or white Spanish onions...
3 cups red, ellow & green peppers sliced into 1 inch strips...
2 medium cloves garlic, chopped...
1/2 pound uncooked peeled and deveined medium shrimp (about 20)...
1/4 cup lime juice (2/3 medium limes)
1 tbsp snipped fresh cilantro...
1/4 tsp crushed red pepper flakes, or to taste...

1.) Heat a large skillet over medium heat. Add oil and swirl to coat bottom of skillet. Cook onions, peppers, and garlic, uncovered, for 15 minutes. Stirring occasionaly...

2.) Stir in remaining ingredients. Cook for 7 to 9 minutes, or until shrimp turns pink, stirring frequently...

Thats all it takes. Is wonderful served on top of steamed brown or white rice. I use instant brown rice.

Cal.144, total fat 6g, carbs 11g, fiber 2, sodium 89. A very healthy meal...& yummy too! [Big Grin]

Chatty, I wish you had posted this yesterday. It sounds delicious and I'm making shrimp tonight, but I don't have the peppers and I don't have my car today! Now I'll have to wait until next week to try it!

Ah yes, my famiy will be so happy. Another ecipe to try.
