Cucumber and Pea Salad

* 1/2 cucumber, peeled, sliced thin and quartered
* 2 green onions chopped
* 1 small tomato, chopped (Roma seems to be the tastiest)
* 1 cup frozen peas, thawed
* 2 tablespoons white vinegar (with tarragon; nice but optional)
* 1 tablespoon olive oil
* 1/2 teaspoon oregano
* 1/4 teaspoon salt (or salt substitute to taste)

MIX all the ingredients together and serve...

Lucious Layered Salad

* 6 cups coarsely chopped romaine lettuce
* 1 (10-ounce) package frozen peas, thawed
* 1/3 cup low-fat mayonnaise
* 1/2 teaspoon low-sodium seasoned salt or salt substitute
* 2 stalks celery, thinly sliced
* 4 green onions, (with green tops) thinly sliced
* 1 large tomato, chopped
* 1/2 cup black olives, chopped
* 3 slices turkey bacon, cooked crispy and crumbled, or 6 tablespoons of bacon bits
* 3/4 cup grated sharp Cheddar cheese

Place romaine in a medium salad bowl.
Spread peas evenly over romain.
Spread mayonnaise evenly over peas, and sprinkle salt over mayonnaise.
Layer remaining ingredients evenly over peas and mayonaisse in this order: celery, onions, tomato, turkey bacon, and cheese. Cover and refrigerate at least one hour before serving.

I use as a dressing either olive oil and balsamic vinegar, or blue cheese and french mixed...

Island Breeze Salad

* 2 tabloespoons fresh lime juice
* 2 tablespoons sugar substitute (or finely granulated sugar)
* 2 teaspoons macadamia oli or almond oil
* 1/4 teaspoon freshly ground pepper
* pinch of ground ginger
* 6 cups leaf lettuce: romaine, ar mixed greens
* 1/4 cup thinly sliced onion (preferably sweet Maui)
* 2 kiwifruit, peeled and thinly sliced
* 1/4 cup macadamia nuts or blanched almonds

MIX lime juice, sugar,(or sub.)macadamia or almond oil, pepper, ginger, in a small bowl. Set aside...
In a large bowl, toss lettuce with onion slices and kiwifruit.
Pour in the lime juice mixture and toss to coat evenly. Add nuts and toss again...
