Makes four servings...

CRUNCHY TUNA SANDWICHES

1 small can tuna in water (6 oz., preferably Albacore) drained.
1/4 cup of low-fat or fat-free mayonnaise.
1/8 teaspoon low-sodium seasoned salt or salt substitute
1/8 teaspoon freshly ground black pepper
1/2 cup chopped celery
1/2 cup chopped apple
2 tablespoons chopped onion
1/4 cup chopped almonds
4 slices sprouted-grain bread
4 large tomato slices...

Combine first seven ingredients in a medium bowl. Mix well!
Stir in almonds just before serving.
Serve open faced on the four slices of bread, topping each with a slice of tomato...

I like this, Chatty. Thanks for sharing. I'm not real crazy about fish yet I know I need to eat more of it. Tuna helps...but I get tired of the same old, same old. This will kick it up a notch!

JJ, Try chicken in the can. Or cook a breast and cut it up in the dish, works fine. You could also use a cut up lean piece of steak. They all work just fine, turkey too!!!
