One these hot days this is something that takes only minutes and is so tasty and healthy as well...

Beans and Macaroni

1 can of northern or baby lima beans
1 can of stewed tomatoes, mashed up
1/2 stick of butter
2 cloves garlic, minced
1/2 medium onion, chipped
1 tablespoon of Italian seasoning
1 cup of frozen spinach
2 cups of Barilla Pasta, any shape
1/4 cup parmesian cheese


Put butter in large fry pan, add onions, garlic & saute....
Add can of tomatoes and let cook 3 minutes...
Add can of beans, juice too, allow to simmer 10 min...
Add the frozen/thawed spinach...stir well...
Add Italian seasoning, salt and pepper to taste...
Cook until the mixture bubbles...serve in soup bowls...
Sprinkle cheese on top...


I serve this with warm Italian bread and olive oil or butter...yummy, fast and nurtritious!

Chatty, other than the frozen spinach (my favorite veggie), we make the same recipe and call it Pasta Fagioli. It's known as the "poor people's recipe" in our Italian home but one of our favorites!

Yea Pam in our house growing up it was called the same thing. I added the spinach for color and it adds to the taste as well. I am always either inventing or adding to or changing recipes in some way. My son says I am the MAD Scientist of the kitchen...
