Watermelon Berry Star Cake

Ingredients:

1 seedless watermelon, at least 10 pounds
3/4 cup whipped cream, or white frosting
1 1/2 cup blueberries, fresh not frozen
1 cup strawberries, hulled and sliced
1/2 cup rasberries, fresh not frozen
Powdered sugar

Directions:

Cut a 3-inch thick slice from the center of an oblong, seedless watermelon.
Place flat on a cutting board and use an oversized approximately 7-inch wide star shaped cookie cutter (or sharp kitchen knife) to cut out a large star shape.
Wash the watermelon and pat dry. Set on a paper towel to drain excess water.
Place star on a serving dish or cake stand.
Pipe whipped cream or the light frosting between the bottom edge of the star and the plate. Dot with blueberries.
Frost the top of the star. Arrange blueberries, strawberries and rasberries on top in a star design.
Sprinkle with powdered sugar and serve.

Chats, thanks for sharing this and the link. A watermelon doesn't last long enough around here for me to try this though. I could gorge myself on the melon...love it.

Boy do I even understand JJ. I alwys buy two when wanting to make my watermelon cake, it goes so fast. Then inside the frig I have another whole watermelon just for me...LOL!!!
