Artichoke Delight

1 bag (18 oz) broccoli, cauliflower and carrots.
1 clove garlic, minced.
1 jar (12 oz) marinated artichoke hearts.
1 tsp. dried oregano.
2 cups whole wheat rotini, cooked.
2 tbsp. Parmesan cheese.

Microwave vegetables and garlic until tender, 3 to 4 minutes, or saute in pan coated with cooking spray until tender.
Toss vegetables, garlic, artichokes (marinade included) and oregano with drained pasta.
Heat in the pasta pot for several minutes.
Sprinkle with cheese.
Serves four.
